So the people of Group A of your experiment have changed from disliking french fries to actually liking french fries. Initially they didn't like french fries at all, because that's what their personal taste/personality was at it's current state. However, deep down inside all of those people of Group A, they did have a personality/taste in which they did actually like french fries, but the problem was that it was developed; it wasn't unleashed. However because of the experiment, or just the passing of time in their lives, their hidden personality/taste slowly began to reveal themselves.
Group B on the other hand, never had this hidden personality. Maybe a few of them needed more time, but Alot of them will never EVER like french fries for the rest of their lives.
So the point is that gayness is a personality, whether it is developed or not. To some people however, it might not be developed and is still hidden. ALOT of people on the otherhand, never had such a thing as a hidden preference over same sex people. Those people who "converted" from being straight to being gay later on in their lives probably started off with an undeveloped gay personality.
There might even be maybe a few of us here on SEN who probably have an undeveloped gay personality. We might not awaken it for another 5, 10 or 20 years. Infact it is possible that some of us will never unveal it.
But again the point is that gayness is a personality. When people "choose" to be gay, it's because they really do like people of the same gender. Nobody in their right mind would voluntarily choose to start liking people of their same gender when deep down inside they can't imagine themselves making out with them. I mean, just try it. Try liking men instead of women. You think you can do that?

Anyway you said what I wanted 2 say, just you said it straight forward. Baseline, Gays are gay because they choose to be. Even if you THINK you're born gay, you have the choice to embrace it or extort it. It really depends on how you're brought up, I already gave a few examples(and if MA didn't step in I was gonna re-quote myself). Some people will like carots and some will like broccoli, it just works that way sometimes. Now as for matching it up with the church, they have all the right in the world to exclude people from their organization. I also wanna point out, a church isn't a person, it's a system. It doesn't have sympathy and or a conscience, it has rules that are conceived as inconclusive or as merciful justice. A church is absolute, humans as far as I know are not. If an absolute entity has a will, you really can't change it. These systems we humans create can't be controlled, no one is gonna change the church. With that being said, be gay or don't be gay you CAN choose. And though the church is against it, it's the church's choice.
