Can't really comment on your PS2, although GTA is one player...
As for your cube games, In my experience, F-Zero, although it has a great singleplayer, the multiplayer is terrible. I have also heard the Metroid multiplayer was iffy as well.

GTA:SA can be 2 player if you find the icon in this one town. A second player can join in, but the bad things are:
1. Only one person can be in a vehicle at a time(unless both players get in the same one).
2. If both players are using jetpacks, the camera angles and controls can get a bit anooying.
Our experiences are quite different for F-Zero. I've only played multiplayer with just one of my friends, but we had fun. I'd beat him all the time but he didn't give up so easily.
And you're right about Metroid's multiplayer. It could've been better but it can be fun sometimes, it just depends on the situation and what's going on. One thing I did to make it a little better was I had me and my friend use grapple beam on the same point and we'd try to shoot or bump eachother off and make them fall.
Anyway, I'll end the post with my list of multiplayer games me and my friends play:
1. Halo 2
2. Super Smash Bros. Melee
3. Metroid Prime 2:Echoes
