Sure, one bullet will kill if you hit them in the heart, or the head, or a major artery, but most people can take alot more than one bullet. Someone getting shot in the stomach wont kill them, if if they're wearing like a steel helmet, getting hit in the head might not kill them.
Even without protection, people can take more that one shot. There was that lawyer who took like a clip of a pistol at point blank and didn't die, the guy who got shot in the HEAD at point blank with a 357 or 44 (don't rememeber) MAGNUM, and didn't die. There was a lady who was pinned against the ground and shot in the back of the head, but the bullet bounced off of her skull. I can probably dig up alot more then that
The point is that most people can take more than one bullet as long as they are fit. People in the army, special ops, ect, will be in training, and therefor be fit. People in Rainbow 6 are pretty realistic, one bullet wont kill but a couple will.

Wow, skulls can now bounce bullets off? I'd like to see this story.
What I'm trying to say is that people can die from either a single shot OR multiple shots. That's a fact.
But the way games like Counter-Strike portray realism is unbelievable. People can not withstand that many bullets and live.
From the forums I've been through, I've read about people who HAVE been to Iraq and HAVE seen soldiers die from single bullets, WITH armor. If you want the link, I'll give it to you in a bit.
As much as Rainbow Six improves on realism, it still doesn't come close to the real thing. However, the best example of realistic settings would be in a game called Hostile Intent, which is a mod for Half-Life. If you are interested in realism, you should head over to:

I won't bother arguing any further, as I would not know what being shot with a bullet is (and I doubt you would either), but like I said before, people can die from single shots as well.
