I prefer the Street fighters Series and also the Soul Blade/Calibur series which I can't wait for SC3 to come out. 
Theyre all the same. (Good, but the same) I have a few Street Fighters (Have one for Super Nintendo, a ps2 one, and i think a ps1 one.)
I also think Mortal Kombat is really fun.
That concludes my theories of the "fighting" system.

Personaly, I don't care much for fighting games. Never got into Mortal Kombat or Street Fighter. Only game that I really played much was Tekken 3, and even then, by "much" I mean a total of maybe five hours. Over several months.
One Must Fall 2097 is the greatest fighting game ever. It was for PC back in the golden age of fighting games, look it up.
I would definately have to give it up for Capcom vs SNK 1 and 2. Those are both very diverse and very intense fighting games. I love them both. More honorable mentions are Street Fighter, SSMB (I think this goes without saying), Tekken series, Virtual On, and Zone of the Enders.
The last two aren't human fighting games but rather mech fighting games that have excellent gameplay and were both fun for hours to play with friends.
I like Tekken. Surprisingly, fighting games are the only games I keep playing after 10 deaths. I also like 2D fighting games. They're fun.
Street Fighter, Marvel Vs Capcom 2, SSBM, Soul Calibur II. I don't really like Mortal Kombat, and I never really got into Tekken or Virtual Fighter.

Yeah there were a couple good DBZ fighting games. I haven't played budokai but I hear its a lot like the typical 2d fighter game and it moves way faster than Final Bout, which is good. There was one really good one which actually provided some nice 15 minute fights ... cant remember if it was Ultimate Battle 22, I think it was. It was the 2d/3d one where you had to take your opponents energy down and then use an energy attack to take his health down. Quite fun and very button mashing intensive actually. More mindless than anything though.

And Killer Instinct+Gold was good.
I like Tekken 5, but the Devil Within minigame was a bit lackluster

If you get really good at budokai 3 it goes so fast that normal people can't see the characters.
SSBM is the best fighting game of all time. Ever.
I play SSBM with my friends and it gets boring and repetitive after 10 minutes.
I play Soul Calibur II with my friends and we play it for hours because of the nearly 100 moves each fighter has and the countering system.
I think the Soul Calibur series is the best because it's the only fighter that makes 3D feel good. This is because when you move up or down on your joystick, the fighter moves left to right.
In real life, more people strafe than actually duck or even *ahem* jump when fighting.
The game has the most strategy I have ever seen in a fighter.
If you get board playing SSBM after 10 minutes you must suck at it. I've gotten through 99 life games and kept playing.

I don't think it's wise to assume everyone sucks at a game because they are bored of it.
I don't know what your definition of good is, but I can safely say I can rock all my friends at the game. Perhaps being good makes it boring.
What I can say without doubt is that I get bored because it's so limited when I compare it to SCII. There are so many fighters in SSBM that are clones of others with a couple weight tweaks or so. In SCII, fighters can share the same moves, but they also have a couple unique moves. Speaking of moves, each fighter in SCII carries nearly 100 moves each AND each fighter has 10 unique weapons that give them special properties. Throw in the advanced countering such as blocking attacks, crouching high hits, or sidestepping verticals and the game lasts for hours.
SSBM means you use the same moves many times and kill the other guy in similar methods. In SCII, there is strategy because you choose what moves to use and what moves NOT to use. Big difference there. I happen to like deep fighting games and SCII fits the bill.

I heard that they are going to make a new game with all of the guys that are in DBZ in it. You will be able to play as all of the DBZ guys that are on the show.[COLOR=green]

It's simple and fun, its not repetitive between me and my friends because we're all so good at it that we constantly try to throw each other off by pulling off different manuevers and such. The only repetitive part about it with us is I use Samus and they use the pink things (yes I know what they are called).

There already is, Final Bout had almost every one and Ultimate Battle 22 had every character I think.
