I believe Yoshi is male since the wikipedia article refers to Yoshi as he multiple times. Also on the official Nintendo site:

Nintendo seems to be morphing Birdo into a female. It clearly had a giant pink bow on its head and long eyelashes in Mario Kart Double Dash.

Yoshi is a dinosaur. It doesn't really matter. But definitely male. They all lay eggs. I think it's really some kind of unholy mitosis
