The GRPs are in StarDat.mpq and BroodDat.mpq. You have to extract them with WinMPQ.

You probably need the MPQ Listfiles: http://www.staredit.net/index.php?tutorial=265

StarCraft mirrors unit frames, so each unit only has frames for 180 degrees, then SC mirrors those frames for the other 180. Besides that, yes you do have to edit all the frames. Most units have very few frames, except for infantry and some Zerg.

"and save it in your WinMPQ folder. Now, open WinMPQ, select 'Options...' from the menu, then go to the 'File Lists' tab and 'Add Listfile...'. Now select UED77's listfile which you just downloaded. Now open an MPQ and you'll find a lot of the ~unknown files are now gone, and there are useful names instead."

And see Chapter VI on how to edit GRP files. The files are under /unit/terran, etc. in StarDat.mpq.
