its actually very complex and intricate... but the basics are pretty easy. my sig was made with some basic stuff... then i used image ready to animate it (its so sexy :0)

Double click the text layer after rasterizing it, then go into the bevel and emboss area.

i want to make my text thick.. so i can edit the middle.. like so the text has the same color as the background..

uh... what? well if you want to make the text thick i think your gonna have to convert the text layer into a regular layer then stretch it out.
and for that other stuff, while you select the text layer go to LAYER>LAYER STYLES and there are all these differnt styles Drop Shadow, Outer Glow etc. just screw around with those(bevel and emboss is good for the 3d effect)

its easy... its all in the bevel/emboss, stroke, gradient layer, glowing effect, drop shadow.
