They're a static part of a doodad that units can pass through/under. Like the part of trees with branches, that's the sprite, the trunk is the doodad.
If you want to get more technical the trunk is extended terrain and the leaves are the static sprite.
Sprites are graphics used as simple animations or static designs that are used for overlapping and layered doodads, creating depth, explosions, spells, you name it.
I do not understand more with these examples .... Sorry
Sprites are graphics than you see but you cant click,sprites dont have "dimentions" as units so any unit could pass trough sprite without problems
They Are Basically Units That you cannot select, cannot do anything to, and can move through it...

Sprites are bad because unit fire effects (Marines, Ghosts, ... etc) are sprites, so if you use too many in the map you will eventually not see the unit's attacks.

Depends on how many units you use in your map
